Savoury Pies


The original convenience food, the savoury pie can be found throughout culinary history. The Brits brought the modern pie to America in the 1600s but, over the years, our pies have largely evolved as the popular dessert. 

Bürbelmaiers’ savoury pies respect tradition while introducing modern twists, including vegetarian & gluten-free. Our pie crusts are based on the classic hot water recipe and a French-style pate-brisee.

And, yes, we're spelling “savoury” the British way. :)

TRADITIONAL SAVOURY CRUST PIES

Our house-made Lincolnshire-style Sausage and cubed Pork Loin with a generous layer of Stilton Cheese on top.

Beef & Mushroom

Boneless Short Rib, oven-roasted Mushrooms and caramelized Onions slowly braised in a rich Red Wine and Sherry sauce.

Curried Lamb

Seared, 36-hour slow-roasted Leg of Lamb, shredded into a classic Curry with Red Peppers, Onions, Chilies, and Okra.

HOW TO HEAT UP YOUR TAKE-HOME PIES

Preheat oven to 375°F. Place in oven, preferably on a metal tray. Heat enclosed pies for 10-15 minutes, or until internal temperature reaches 165°F. Open top pies heat for 8-10 minutes, or until internal temperature reaches 165°F.

Vegetarian Pies

These pies are made with our short crust, which contains butter. We do not currently offer vegan pie crust.

Wild Mushroom & Asparagus

Parisienne, Oyster, Shiitake & Porcini Mushrooms with Asparagus & caramelized Onions in a White Wine and Sherry Cream sauce in our gluten-free hot water crust.

Mushroom Tortiere

A classic French duxelle: finely chopped Mushrooms & Shallots reduced in Butter, and seasoned with thyme & black pepper in our all-butter short crust.

Vegetable Korma (GF)

Roasted Cauliflower, Carrots, Peppers, Onions & Celery, tossed with Chickpeas & Sultanas cooked in a mild coconut-milk based Curry sauce.


Gluten-Free Pies

Our gluten-free pie crust is made with an in-house recipe of chick pea & fava bean flours, sorghum, flax seeds, and organic, sustainable palm kernel shortening. The gluten-free crust does contain egg. (We do not currently offer vegan pie crust.) Please note that, although we strive to separate our products, GF pies are made in-house where non-GF products are made. 

Coq Au Vin (GF)

A French Classic turned into a pie! Chicken, marinated & braised in red wine & brandy, with Herbes de Provence, Pearl Onions, baby button Mushrooms & Bacon, topped with our velvety mashed Potatoes.

Alsatian Onion Tart (GF)

Slowly caramelized Onions with Crème Fraîche, Thyme and Sherry Vinegar, topped with whipped Goat Cheese.

Vegetable Korma (GF)

Roasted Cauliflower, Carrots, Peppers, Onions & Celery, tossed with Chickpeas & Sultanas cooked in a mild coconut-milk based Curry sauce.

Shepherd's Pie (GF)

Ground Beef with Green Beans and  Tomatoes, topped with our house mashed Potatoes.

Mac & Cheese (GF)

That’s right! Chickpea Elbow Pasta in a rich Cheese sauce, topped with flaked Quinoa and more Cheese, all delivered in a gluten free shell.

All of our savoury pies are served with salad.
Make it a Ploughman's (with Cheese & Pickle of the Day), $3 additional.
Or, request the Full Monty: with Mash, Butter Beans, Mushy Peas & Onion Gravy for $3 additional.

Our Onion Gravy is gluten free AND vegetarian!
Our Mash is a not-so-standard, buttery mound of Mashed Potatoes.
Butter Beans are a smoked Southern delicacy you’ll love at first bite.
And Mushy Peas are a British must-have -- if you’re not British, then a must-try!


SOUP

We offer two daily soups, sometimes vegetarian. Soups will change often and reflect what looks & sounds good to our chef.

Other soups in our repertoire include: Potato, Leek & Stilton; Black Bean, Mulligatawny, Gazpacho, Beef Barley Mushroom, Posole and Kimchi Chowder. We also offer house-made bone broth (seasonal), a delicious & nutritious super-light soup. Try some in our dining room or pick up a quart to use in place of stock in your favorite recipe!
